The idea

Rather than grab the second pawn too, Black strikes back immediately with c5, handing the extra pawn back to sidestep White’s sharpest attacking lines in exchange for a calmer position with a normal material count. It’s the practical, lower-risk branch of the family for the side that would rather not defend an extra pawn against a full-scale attack.
